Essential in every stew from the Spanish region of Navarre.

Great cuisine, where thistles got their start, has a long history of prestige and embodiment of good health. Previously a by-product of the coveted green leaves, thistles have come to embody a fun, versitle side to green leafy vegetables. Whether thistles or chard, its commonly preparated in a breaded batter, and accompanied with ham as a tapas dish or as a starter.

 

Thistles are enjoyed throughout Spain, but are particularly appreciated in Aragon and Navarra. Here they are present in many stews and soups where ham is introduced as a special guest to enhance the flavour.

  • Thistles enjoy a prominent role in typical Navarran stews, with the flavour of ham always in the forefront.

 

  • It’s best not to put the ham on the fire, as per tradition, until adding the flour.

 

  • It’s better to use the ham fat and add diced ham at the very end of the cooking process, which will enhance the flavour of the stew.
